Consumers, food safety knowledge, and trust: insights for EFSA risk communication

This thesis follows from the motivation—stated in the foreword—to contribute to a problem-driven, society-oriented application of quantitative methods to support food policies. The scope of application lies within the Agrifood sector. Specifically, I explore whether—and how—institutional communication can correct or redirect population-level food consumption towards healthier, more sustainable, and more responsible eating behaviors. The present work will evaluate the food risk perceived by a sample of the European population about the presence of Bisphenol-A in food contact materials, before its ban, and will investigate the effects over concern measures of different communication formats.
